Particularities
In peru, washed coffees are usually still fermented in the form of cherry in large tanks. This is what gives these coffees their acidity that is different from other countries in South and Central America.
History of our coffee from Peru Holycow
The history of La Palestina begins more than 40 years ago, when Patriarch Don Juan Alarcon bought land near the village of El Triunfo. Today, it is the sons of Don Juan who have taken over the operation and who each manage their respective plot of land. In total, La Palestina has 7 plots, which extend over more than 11 hectares, making it the largest farm in the Origin Coffee Lab network, our export partners in Peru. Among the Alarcon brothers is José, from whom we also bought a coffee that we recently launched as an exceptional lot! José and his brothers each specialize in one aspect of coffee production. By combining their expertise, they manage to produce quality coffees consistently, in addition to opening doors for experiences towards new profiles.
